Six-Ingredient Summer Salad Lemon Dressing: Easy & Clean, YO!

I completely DIE DIE DIE over this salad dressing. It’s so FRESH and addicting–great for a summer salad and goes well on just about anything. I even like dipping my veggies in it. It’s so much cheaper to make than buying bottled dressings at the store and the great part is you know exactly what’s in it. I put some low-calorie and calorie free options below if you are really watching what your intake but remember, olive oil is such a great healthy fat for you and you need those healthy fats 🙂 Hope you enjoy as much as I do. I prefer acidic salad dressings and this one is very acidic — if you’re not into that type of thing, you might want to stay away.

Ingredients Needed: 

  • Olive Oil
  • Fresh Lemons (5-6 – I always get more than I need to be safe)
  • Salt (Hold salt if you truly want a “clean” salad dressing but I prefer it with the saltiness)
  • Pepper
  • 8-10 Garlic Cloves
  • Fresh Mint (Optional-I prefer mine without)

Around 100 Calories Per Serving (2 tbsp): 

  • Juice 1 Cup of Lemons
  • Add 1/2 Cup Olive Oil
  • 2 tsp Salt
  • 1/2 tsp Pepper
  • 8-10 Galric Cloves (Chopped)
  • 2 tbsp Fresh Mint (Optional)

Around 50 Calories Per Serving (2 tbsp):

  • Juice 1 1/4 Cup Lemons
  • Add 1/4 Cup Olive Oil
  • 2 tsp Salt
  • 1/2 tsp Pepper
  • 8-10 Garlic Cloves (Chopped)
  • 2 tbsp Fresh Mint (Optional)

Calorie Free: 

  • Juice 1.5 Cups of Lemons
  • 2 tsp Salt
  • 1/2 tsp Pepper
  • 8-10 Garlic Cloves (Chopped)
  • 2 tbsp Fresh Mint (Optional)
